Raspberry Lemon Clove Shrub

This fragrant fall drink is wonderful to have in your fridge to mix a quick cocktail, or combine it with sparkling water, tonic or soda water for a fast nonalcoholic drink. The raspberry shrub is versatile and can be used in endless ways, including Shrub with Chardonnay, Shrub Cocktail, and Shrub Tonic.  Feel free to use other fresh fruits (strawberries, blackberries, peaches, etc.).

Ingredients

  • 2 cups raspberries
  • Zest of 1 lemon
  • 5 whole cloves
  • 1½ cups white sugar
  • 1½ cups apple cider vinegar

Instructions

Makes 12 to 14 ounces

In a glass container with a lid, combine the raspberries, zest, cloves and sugar. Mix well; the mixture will look grainy. Cover and leave on the counter for 24 hours.

Add the vinegar and mix well. The sugar will dissolve and the raspberries will have given off a lot of liquid. Cover and let sit on the counter for 4 to 5 days. Stir the mixture each day. It should smell like vinegar and sweet raspberries.

On day 5, taste a spoonful of the liquid. It should be very strong, sweet and sour. Strain out the solids. Place in a container in the fridge for up to 6 months.
