Ingredients
- 2 cups blackberries, rinsed
- 1 tablespoon lemon juice
- ¼ cup mayonnaise
- 8 slices thick bread
- 1 cup basil leaves
- 8 ounces white cheddar cheese, grated
- 12 slices bacon, cooked

Serves 4
Combine blackberries and lemon juice in a medium bowl. Smash the blackberries with a fork. Spread a thin layer of mayonnaise over one piece of bread. Place mayonnaise-side down on a plate and top with 3 to 4 basil leaves, a sprinkle of cheese, ¼ of the blackberry mixture, 3 slices of bacon and another sprinkle of cheese.
Place another piece of bread on top and spread more mayonnaise on the outside. Assemble all sandwiches in the same manner.
Cook each sandwich in a skillet at low to medium heat for 3 to 4 minutes per side until the cheese is melted and the bread is browned; press down with a spatula a few times while cooking.
Cut each sandwich in half and serve.
