Roasted Cauliflower with Lime Vinaigrette

Instructions

Toss the cauliflower with the coconut oil and salt. Roast at 425° for 30 minutes. 

In a small bowl combine the remaining ingredients and stir together. When the cauliflower is done, allow to cool for 10 minutes and then mix with the dressing. Serve at room temperature

  • 2 teaspoons lime juice
  • 1 teaspoon diced fresh chilies, choose your desired heat
