
Gooseberry Fool
The Brits seem to love a good gooseberry. Any glance through the cookbook of a British chef will often reveal at least one recipe for gooseberries. This traditional dessert shows up many places. The simplicity of its preparation and service highlights the unique sweet/sour combination present in this delightful fruit.
Ingredients
- 3 cups red or green gooseberries, rinsed and stems removed
- ½ cup sugar
- ½ cup water
- 1½ cups heavy cream
- ¼ cup sugar
- ½ teaspoon vanilla
Instructions
- Cook the gooseberries with the sugar and water in a medium saucepan. Allow to cool. Whip the cream with the sugar and vanilla until soft peaks form. To serve, in a glass bowl or cup alternate the gooseberries with the whipped cream. Serve immediately or refrigerate.
