
Clover Club Cocktail
This cocktail was enjoyed by lawyers, industry leaders, journalists and doctors of the late 1800s and early 1900s in the Clover Club, an elite gentlemen’s club in the Bellevue-Stratford Hotel in downtown Philadelphia. The creator of this pre-Prohibition cocktail remains unknown, and it almost disappeared from bars and restaurants for much of the 20th century. In recent years, the Clover Club Cocktail has regained popularity, which is no surprise because it is as delicious as it is beautiful. Dry gin and vermouth pair perfectly with the sour lemon and sweet raspberries, while foamy egg white adds a luscious texture. A “reverse dry shake” method is used to achieve the perfect foam.
Ingredients
Simple Syrup
- 1 cup sugar
- ½ cup water
Cocktail
- 5–6 raspberries, plus more for garnish
- 1½ ounces gin
- ½ ounce dry vermouth
- ½ ounce lemon juice
- ¾ ounce Simple Syrup
- 1 egg white
Instructions
- Serves 1 In a small saucepan, heat the sugar and water over medium heat until the sugar fully dissolves. Pour into a small jar and let cool completely before storing in the refrigerator. The Simple Syrup will stay fresh in the refrigerator for a few months. Add the raspberries to a cocktail shaker and smash with the back of a spoon. Place gin, vermouth, lemon juice, Simple Syrup and a large scoop of ice into the shaker. Shake for 20 to 30 seconds or until the shaker is too cold to hold. Remove the ice from the shaker. Add the egg white, shake again for 20 seconds until the egg white is frothy. Strain through a fine-mesh strainer into a chilled coupe glass. Garnish with raspberries and serve.
