After-School Guacamole

This is our favorite snack and my older kids can make it themselves. It’s super healthy and filling enough to get them through soccer practice, music lessons or whatever else we’re rushing to after school. I often pack it for school lunches with tortilla chips because it’s just as fast as making a sandwich.

Ingredients
  

  • 3 ripe avocados
  • 1 lime
  • ½ teaspoon kosher salt
  • ¼ cup whole-milk Greek yogurt

Optional mix-ins

  • 1 cup finely chopped kale
  • 1 cup pomegranate seeds
  • 1 teaspoon hot sauce
  • ¼ cup finely chopped cilantro

Instructions
 

  • Pit each avocado, scrape out the insides and mash with a mortar and pestle or fork until it is still a little bit chunky. Add lime juice, kosher salt and Greek yogurt and stir until well blended. Add any optional mix-ins. Serve with tortilla chips or carrot sticks.
