Adriana is a resident of St. Joseph, Michigan, where she lives with her son, Leo, and her daughter, Lucy. She teaches Spanish at Brookview Montessori and works for Molter Family Orchards as their food guru and social marketing specialist during the summers.
 
EM: What meal do you always have ingredients for in your kitchen?
 
AM: I always have salsa, beans and rice on hand, usually paired with some kind of protein. Sometimes I even have eggs with my beans at breakfast.
 
EM: What do you make when you’re cooking for yourself or when you’re at home alone?
 
AM: I usually go for a noodle bowl. Sometimes I’ll substitute zucchini noodles, but the basics are always the same: some kind of broth, noodles and seasoned with hoisin sauce, sriracha, lime and cilantro. I like to switch it up: Sometimes the noodle bowl is Mexican, and other times it’s Asian.
 
EM: What ingredient would you never buy?
 
AM: I would never buy margarine or fake cheese. I just really don’t like hydrogenated oils.
 
EM: What’s the last meal you made?
 
AM: I just recently made an Indian lentil stew.
 
EM: If you had a restaurant, what would the concept of it be?
 
AM: It would be local, fresh and as organic as I could be—but definitely Mexican, since that’s what I’m known for.
