Salsa Borracha Salad Dressing

This dressing was inspired by the Guinness Dressing at Constant Spring in Goshen, Indiana.

Ingredients

  • 1 tablespoon chopped red onion
  • 2–4 tablespoons olive oil
  • 1 teaspoon chili powder
  • ½ cup dark beer
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • ¼ teaspoon salt

Instructions

Whisk all ingredients together.

Salad suggestions:

  • Blue cheese
  • Croutons: For homemade croutons, toss day-old bread cubes in olive oil and a pinch of salt. Roast in a 300° oven for 7–10 minutes, until toasted on the outside.
